Equipment Needed For Crispy Fish & Chips
INGREDIENTS:
- 4 medium potatoes
- light cooking spray
- 1 1/4 teaspoons low sodium salt
- 1 cup all-purpose flour
- 2 large eggs
- 2 tablespoons water
- 1 cup whole-wheat panko
- 4 skinless fillets of firm white fish (e.g. cod)
- malt vinegar
LOW FAT FISH & CHIPS RECIPE STEPS:
- Preheat the air fryer at 200ºC. Slice the potatoes into thin chips, leaving the skin on
- Spray the chips with a bit of light cooking spray, season with 1/4 teaspoon of salt and toss to coat
- Add to the air fryer and cook for 10 minutes. After 10 minutes, remove the frying basket, shake the chips and return to the air fryer. Cook for another 10 minutes
- While the chips cook, stir together flour and 1/2 teaspoon salt in a mixing bowl. Lightly whisk together eggs and water in a second bowl. Stir together panko and remaining 1/2 teaspoon salt in a third bowl
- When the chips are cooked, remove them from the air fryer basket and cover them to keep warm
- Dredge each fish fillet in a flour mixture, shaking off excess. Dip in egg mixture, allowing any excess to drip off. Dredge in panko mixture, pressing to adhere
- Spray fish on both sides with a bit of cooking spray. Place in a single layer in the air fryer and cook at 200°C until golden brown, about 10 minutes. Turn fish over halfway through cooking.
- Sprinkle with malt vinegar to serve. You could also serve the chips in serving baskets for that gastropub look
